Eggless Fruit Cake Recipe

Eggless Fruit Cake Recipe is traditionally prepared at Christmas. I do not usually wait until Christmas, but I get ready whenever I want. I loved it with tea or coffee. I add all kinds of nuts and nuts to my favorites.

Eggless Fruit Cake Recipe – INGREDIENTS:

  • Maida (Plain Flour) 200 Gms
  • Yogurt :- 125 Gms
  • Brown Sugar 85 Gms
  • Hot water 150 ml
  • Coconut or any other vegetable oil or butter 85 Ml
  • Baking powder 1 tsp
  • Baking soda ½ tsp
  • Nutmeg (jayfal) powder 1 tsp
  • Cardamom (Elaichi) powder 1 tsp
  • Almonds 10-15 nos
  • Cashews 10-15 nos
  • Apricots 10-15 nos
  • Black and golden raisins 20-25 nos
  • Figs( anjeer) 2-3 nos
  • Tutty fruity ¼ cup
  • Walnuts 10-15 nos
  • Vanilla essence 1 tsp

Eggless Fruit Cake Recipe – DIRECTIONS:

  1. Sift together – Maida (plain flour),baking powder,baking soda,pinch of salt in a bowl
  2. Mix cardamom powder and nutmeg powder and keep the bowl aside
  3. In another bowl add hot water followed by brown sugar and coconut oil ..mix
  4. Add yogurt and mix again
  5. Add the dry ingredients and mix with the help of a whisker so that there are no lumps
  6. Add vanilla essence and mix again
  7. Add all the dried fruits and nuts (apricots ,walnuts,almonds,cashews,figs,tutty fruity) and mix by cut and fold method
  8. Take greased tin and transfer batter
  9. Garnish with the mixed nuts
  10. Tap 2-3 times and bake at 180 degrees for 35-40 minutes
  11. When baked let it cool down completely and then dmould
